Instructions

Crispy spiced chicken thighs piled onto whipped garlic toum, sharp and light at the same time. A drizzle of Mango Habanero brings the sweet heat right at the end.
1

Toss the chicken with olive oil, cumin, paprika, coriander, black pepper, salt, and 1 minced garlic clove. Let sit 10 minutes.

2

Make the toum: blend the remaining 4 garlic cloves with a pinch of salt until finely minced. With the blender running, slowly stream in the oil, alternating with the lemon juice and ice water, until the mixture turns thick and white, like whipped mayonnaise.

3

Heat a skillet over medium-high heat. Sear the chicken in batches until deeply golden and cooked through, 6 to 8 minutes.

4

Spread the toum across a serving plate and pile the chicken on top.

5

Finish with a drizzle of Marma Mango Habanero. Serve immediately.
